Six constants survive every late shift.
Grizz takes the graveyard shift because breakfast tastes better after midnight. He keeps the flat-top low, the hash browns crisp, and the sunglasses on through every order. The chef’s hat outranks the clock, the ticket rail, and most customer opinions. When the rail fills up, he studies it, takes one measured drag, and starts with the plate that asked least politely. Nobody has seen him hurry. The coffee remains untouched.
Low heat. Long night.
Still not rushing.
